Ingredients:

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water (adjust as needed for desired consistency)
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon maple syrup or honey (optional, for a touch of sweetness)
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together tahini, lemon juice, and water until smooth. The mixture may thicken at first but keep whisking until well combined.
  2. Add minced garlic, olive oil, and maple syrup or honey (if using), and continue whisking until the dressing is creamy and well blended.
  3. Taste and season with salt and pepper according to your preference. Adjust the consistency by adding more water if needed, for a thinner dressing.
  4. If you prefer a smoother dressing, you can transfer the mixture to a blender or food processor and blend until creamy.
  5. Once the dressing is ready, you can use it immediately or store it in an airtight container in the refrigerator for up to one week.

This tahini dressing is delicious over salads, grain bowls, roasted vegetables, or as a dip for raw vegetables. You can also customise it by adding herbs like parsley or cilantro, or spices like cumin or paprika, to suit your taste. Enjoy!
